The old Carousel used to show the title, the caption AND the long description (excerpt). The new one only shows the title. Can this be customized?

Is it possible to disable meta data like camera etc?

Yes! You can disable the meta data under Jetpack -> Settings -> Writing and then disable the the option for “Show photo Exif metadata in carousel (when available)”. There’s more info on the support page here: https://jetpack.com/support/carousel/
